Get to know a little about Nicole Manning, co-owner of Blue Carrot Catering.
WHY DID YOU GET INVOLVED WITH WEDDINGS? Catering weddings was a natural transition for us. We cater daily for many corporates, and people would ring us to say they loved our food and wanted us to cater their wedding too. We now offer a full wedding service and help couples plan their perfect day.
WHAT DO YOU LOVE MOST ABOUT WHAT YOU DO? I love being a part of one of the most important days of a couple's life. I love creating a personalised menu for them - including any favourite dishes they have. And I love receiving letters from couples saying their guests are still raving about the food they had at their wedding months later!
DESCRIBE THE MOST UNUSUAL JOB YOU’VE EVER HAD? One couple wanted all their food to be red - the same theme as their wedding. So I had to create a menu with dishes that were all red, but it also had to taste great and the dishes had to complement each other.
WHAT’S YOUR FAVOURITE QUOTE? "We are only as good as our last function". This means every detail must be perfect, and every dish delicious, and the service amazing for every single event we cater - whether it is for 5 guests or 500 guests.
WHAT DO YOU WISH EVERY COUPLE WOULD ALREADY KNOW? That the most relaxed weddings are ones that have been well organised. I create a detailed runsheet for every wedding, covering everything from timings, music, the beverages served during the day to times the bus leaves at the end of the night. Then the couple can relax and enjoy their day knowing that everything has been covered.
IF YOU COULD HAVE BRUNCH WITH ANYONE DEAD OR ALIVE, WHO WOULD IT BE? Jamie Oliver (I love his passion for food and enthusiasm for life).
IF YOU WERE GOING TO GET MARRIED OR MARRY AGAIN, NAME THREE THINGS YOU’D HAVE OR DO AT YOUR WEDDING Have a "cheese" cake - not a traditional wedding cake. Book a great band so that every single guest will be dancing. Have continuous canapes and a tapas station - not a seated meal.
